Ingredients
1 lb lean ground beef
1 lb Owens® Premium Regular Pork Sausage
2 slices white sandwich bread, stale
1/4 cup whole milk
2 large eggs
1/2 cup parmesan cheese, grated
1/4 cup fresh parsley, chopped
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
3 hard-boiled eggs, peeled and whole
3/4 cup marinara sauce
2 Tbs balsamic vinegar
2 Tbs light brown sugar
Directions
  1. Heat the oven to 400° F. In a large bowl, add ground beef and Italian sausage. In a small bowl, tear the bread slices into small pieces. Add the milk. Press bread into milk. Let sit for 5 minutes. In a measuring cup, beat the two eggs. Stir in the cheese, parsley, Italian seasoning, garlic powder, onion powder, salt and pepper. Pour over the meat. Add the milk-soaked bread. Using your hands, mix the ingredients into the meat.
  2. Spray a large piece of foil with cooking spray. Lay it flat on the counter. Pour the meat mixture onto the foil. Shape the meat into a large rectangle that is about 1 inch thick and 10 inches long.
  3. Place the hard-boiled eggs down the middle of the meat. Fold up the sides of the foil to bring the meat up around the eggs into the shape of a loaf. Close the foil around the meat. Transfer to a 9 x 13 pan. Place in the oven, and cook for 20 minutes.
  4. Remove meatloaf from the oven. Open the top and the sides of the foil, but leave the meatloaf on the foil. In a bowl, combine the marinara, balsamic vinegar and brown sugar. Brush the marinara mixture over the top and sides of the meatloaf. Place back in the oven (uncovered) for 20 minutes. Remove after 20 minutes, and baste again. Cook for 20 more minutes or until an instant-read thermometer inserted into middle of meat registers 160° F. Remove meatloaf from oven. Let it rest for 10 minutes before slicing.
